Runner Bean Pickle
1lb Runner Beans
2-3 Large Onions
1lb Demerara Sugar
1 tablespoon Cornflour
1 tablespoon Turmeric
½ teaspoon Mustard
¾ pint Vinegar
1 Apple
String and slice the runner beans, then boil in salted water until soft and drain thoroughly.
Peel and chop the onions and cook in a tightly lidded pan with a little water until tender.
Peel and chop the apple and cook in a tightly lidded pan with a little water until tender.
Place the sugar, apple and half of the vinegar into a pan and boil for 15 minutes.
Mix the rest of the ingredients with the remaining vinegar and add to the mixture.
Boil for a further 15 minutes.
Pot and seal immediately.
